I found an interesting recipe on hip domestics - applesauce cake. I made a couple of modifications to the recipe due to either laziness (I don't have the patience to cream butter into sugar, I like to melt the butter and stir that into the sugar - slightly different "crumble" effect) or the need to substitute - I only had baking powder, not baking soda.
I made a small cake - 5 inch round - and some small muffin blobs. Tasty but not overly sweet.
I also found some interesting websites in my search about substitutes.
This gave me the info about the crumble affect. Baking 911 is a great site all about baking. My next project will be the pancakes I think. And then I went looking for other applesauce cake recipes: 1, 2, and 3. No. None of these was the one I used.
That would be as follows:
1/2 cup butter (that's a whole stick!)
1 cup granulated sugar, white
1 cup chilled applesauce (I used room temp, and it was unsweetened too)
2 cups all-purpose flour
1 teaspoon baking soda (I used a little bit more than a teaspoon of baking powder, probably needed to use more but there was no firm substitution ratio to be found)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1. Cream butter with sugar (Again, I melted the butter then stirred with the sugar). Add applesauce; beat well. Stir in flour, soda, and spices.
2. Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F for 40 minutes or until done. Use toothpick test.
I used a 5 inch metal pan, and two silicone muffin tins with paper inserts. It took 20 minutes for the muffins and 35 for the 5 inch pan.

In other news, we are checking out this new show Pushing Daisies... Has a Lemony Snicket feel to it (CoB says) and I'm rather enjoying it. We've also become interested in the Bionic Woman and Life.
I really like Life. It reminds me a little of the movie Dream Catcher, but that is only because of the protagonist. I like the way they've integrated the Zen outlook on life into the main character and how the crimes are solved. It would be interesting to see this put into practice in the real world of criminal investigation.
